The first time I bought Orzo (rice shaped pasta) was at the Pike place market in Seattle. It was lemon flavored Orzo. I forget how I made it, but I remember it being easy to make and delicious. So I bought it again the other day and made a simple one pot meal . To a pot of about 4 cups of boiling water, I added the dehydrated vegetables that had been lying around for ages and a cup of Orzo.
In about ten minutes they were cooked. I had some boiled potatoes and sweet potatoes sitting in the fridge, so I added them to the pot of Orzo and veggies, along with some black pepper, herbs,salt and lemon juice.
The addition of a cup of milk turned it into comfort food! I liked it, so did the boys.. I think, but my husband found it bland, so he spiced it up by adding chopped eggplant that been cooked and seasoned in a cayenne pepper, coconut, tamarind sauce. I don’t think they would go well together but he liked it better that way.

Ingredients
1 Cup Orzo
3/4 Cup dehydrated vegetables
4 Cups of water
1/2 cup cubed boiled potatoes
1/2 cup of cubed boiled sweet potatoes
1 T parsely
2 T Cilantro
1 T Mint
1 Cup of milk ( if you like it creamy)/ Almond milk / Coconut milk
Directions
- Boil water in a stock pot
- Add dehydrated veggies
- After about 5 minutes add Orzo
- Cook for 10 minutes
- Add the potatoes and sweet potatoes
- Add the Parsley, mint & cilantro
- Add th salt, pepper and lemon juice
- Add a cup of milk to make it creamy
